Weedwacker is essentially a Bavarian hefeweizen. Except it isn’t. Weedwacker is exactly the same beer as Fancy Lawnmower Beer but we ferment it with Bavarian hefeweizen yeast instead of kölsch yeast. It is light and refreshing but has a spicy clove note and some banana esters that come from the different yeast.

A true German-style Kölsch. Originally brewed in Cologne, this beer is crisp yet has a sweet malty body that is balanced by a complex, citrus hop character. Multiple additions of German Hallertauer hops are used to achieve this delicate flavor. We use a special Kölsch yeast, an ale yeast that ferments at lager temperatures, to yield the slightly fruity, clean flavor of this beer.

Texas Red doesn’t have any funny anecdotes about how it got its name and it wasn’t the first beer we ever brewed, but this amber lager doesn’t need any of that because the real story is its balanced flavor. In 1685, the explorer La Salle claimed Texas in the name of France, landing at Matagorda Bay on a ship called the Aimable. In honor of Texas’ French and Mexican heritages, we created a complex Belgian-style ale with a name to match: La Bestia is Spanish for “The Beast,” while Aimable is French for “friendly.” This devilishly friendly dark strong ale has a rich, complex nose of deep berry and fig with cinnamon, nutmeg, and black pepper spicy notes, and a superbly drinkable body full of rich, dark fruit flavors. The use of Texas honey and a well attenuated body in the Belgian abbey tradition make this beer superbly drinkable despite its high alcohol content.

What do you get when you take our top-selling Firemans #4 and transform it into 4-squared? Blonde ale to the power of awesome! You might ask how we’ve accomplished this, and you probably should. We start with the basic Firemans recipe, add more of our premium 2-row malted barley to bring this blonde ale up to 16°P, then add massive charges of hops to give some bulk to this burly blonde. The clean, dry finish and the signature Crystal and Glacier hops are still there — we’ve simply multiplied it like crazy. Add to that Herkules, Amarillo and a round of dry-hopping, and you’re left with notes of citrus and a substantial hop flavor and aroma. A truly special beer for our 16th year.
Casks of 4-squared have been additionally dry-hopped with Zythos hops, a blend of Northwest “IPA style” hops. Piney, resinous, and a boost of citrus.

This Beer is Scotch Ale, or Wee Heavy. It is brewed to style. It has a rich sweet malty flavor which is a blend of many different malts and two different types of barley. We actually make the water to match the water profile of Edinburgh Scotland. The combination of the water from Scotland and the English Ale Yeast gave this beer a unique flavor. It leaves what your pallet perceives as a hint of smoke.

This is our favorite beer to drink. We like to call it our “LIGHT BEER” because it is so drinkable for its size; weighing in at 10.54% ABV (Alcohol by volume). This is a Belgian Blonde Ale, brewed with a CrAzY amount of malt and a little Belgian candi syrup to give it that rich Belgian flavor. Hopped with just enough earthy Sterling hops to leave a little sweet rich malt flavor, which makes this beer go down so smooth. We work hard to get our yeast to attenuate, keeping the body down, so it seems much lighter than it really is. We also ferment with an American Ale Yeast so you won’t find the yeasty esters you get with normal Belgians, that allows the rich clean flavor of the malt and candy syrup to come through. This is not a beer brewed to style, it is very unique!
